fix(docker): simplify Dockerfile and fix build issues

- Convert to single-stage build for simplicity
- Fix AS to as casing warnings
- Remove uv dependency, use pip for compatibility
- Streamline Python package installation
- Remove complex multi-stage targets
- Focus on core application functionality
